At the moment, you cannot increment a number global variable by touching it. The workaround is to use the text variable as a number and increment it with a formula. I suggest to add an option to increment a number variable on touch with a choice after reaching the upper limit of whether the number will be max or if the number will wrap back around to the minimum.
